Chicken Paella
Ingredients:
3 skinless boneless chicken breasts cut into 1 inch cubes
2 cups rice, uncooked
3 cups chicken stock
1 can tomato product(I used stewed)
2 medium onions, diced
1 medium bell pepper, diced
1/4 cup spanish olives
1/8 cup brine from olives
1/8 cup jalepeƱo pepper rings
2-3 tbsp garlic, minced
Directions:
Saute chicken, onions, peppers, olives, and garlic with spices. Add rice, and saute until rice is coated. Add brine, tomato product (including its juice), and chicken stock. Cover and cook for approx. 20 min. or until rice is done. Remember to add more seasoning than you think is necessary. The rice can take a lot of spice.
