Episode 32 - Chicken Paella



Chicken Paella


Ingredients:

3 skinless boneless chicken breasts cut into 1 inch cubes
2 cups rice, uncooked
3 cups chicken stock
1 can tomato product(I used stewed)
2 medium onions, diced
1 medium bell pepper, diced
1/4 cup spanish olives
1/8 cup brine from olives
1/8 cup jalepeƱo pepper rings
2-3 tbsp garlic, minced

Directions:

Saute chicken, onions, peppers, olives, and garlic with spices. Add rice, and saute until rice is coated. Add brine, tomato product (including its juice), and chicken stock. Cover and cook for approx. 20 min. or until rice is done. Remember to add more seasoning than you think is necessary. The rice can take a lot of spice.

Episode 30 - Chicken a la king


Quick chicken a la king

Ingredients:

2 skinless boneless chicken breasts, cut in 1 inch cubes
2 onions, diced
1/2 bell pepper, diced
1 qt. chicken stock
1/4 cup flour, for slurry
1/2-3/4 cup cold water, for slurry
cooked egg noodles, or any starch
cayenne pepper
salt
thyme
black pepper

Directions:

Saute the chicken, onion, and pepper until chicken is cooked. Heat chicken stock to low boil. Mix flour and COLD water for slurry. Whisk into boiling stock to make a gravy. Season with salt, pepper, thyme, and cayenne. Add the cooked chicken mixture. Serve over any starch component you like, from toast to potatoes.

Episode 29 - Stuffed Peppers


Stuffed Peppers


Recipe By: Charles Brooks  

Ingredients: 

10-12 Banana peppers decapped and seeded 
1-2 lbs ground meat 
1 cup rice uncooked 
salt to taste 
1-2 tsp pepper
1/2 tsp cummin  
red pepper seeds 
1 jar spaghetti sauce 

Directions:
Decap and slice the peppers down one side. Remove the seeds, and discard. Mix the ground meat, rice, and whatever seasonings that you desire together in a bowl (you don't have to use the ones I used, go with flavors you enjoy). Stuff the peppers with the meat mixture and place in a casserole dish. Preheat oven to 375-400 F. Pour half of the jar of sauce over the peppers, mix water with the other half and finish filling the casserole dish until the sauce covers the sides of the peppers. Bake for about an hour or until the meat is thoroughly cooked. You can dust the top of the peppers with parmesan cheese for the last 15 minutes if you so desire.
