Chicken parm is restaurant tradition. It's one of the easiest to cook and is finished in little time. Its more expensive sibling, veal parmesan, is done the same way. All you do is run your meat through a breading station and pan fry it. Throw some cheese on top and some red sauce. Fire the whole thing in a broiler for a few minutes and you're done. Pretty basic. This recipe works with veggies too, e.g. eggplant.
