Chicken Piccata
Ingredients: 2 skinless boneless chicken breasts, cut into scalopini
1 cup flour, for dredge
1 onion, diced
1\4 to 1\2 cup sweet white wine
1\2 lemon per pan of chicken
Directions:
Cut chicken breasts in thirds horizontally. Then cut these pieces in half. Dredge in flour. Saute in pan with a little olive oil. When bottom is golden, flip and add onion. When this second side is almost done add a little white wine. This will make the sauce. Finish with lemon juice and serve.
